Mmmmm -- Peach Cobbler

For the last few days, I've been locked out of Blogger, Gmail and several of my other long standing accounts (Ebay, Amazon, Netflix, et al)-- what a mess. Apparently, my accounts were hijacked or hacked or something -- very creepy. It's taken days to get everything back to normal -- kind of. Actually, now I'm kind of wondering about Google/Blogger. All the other online accounts I needed to restore had real human beings available to help me straighten all this out (either through online chat or phone), but Google -- no. In fact, it took three days to finally get a response from them -- frustrating.

Anyway, not that much going on around here, but I wanted to post my peach cobbler recipe just in case you've been able to get your hands on some good summer peaches and might be wanting to try out a new recipe for using them. Finally, here it is:

Family Favorite Peach Cobbler

4 c. peeled peaches (about 8 - 10)
1 1/2 c. water (or enough to just cover peaches when you put them into pan)
1 1/2 c. sugar (more or less depending on sweetness of peaches)
1/3 c. flour
1 stick (1/4 lb.) butter
2 T. lemon juice
1 teas. vanilla
1 pie crust

Combine peaches and water and cook over medium low heat about 15 minutes.

Combine flour and sugar; slowly stir into peaches.

Stir in stick of butter, lemon juice and vanilla.

Continue cooking until slightly thickened.

Pour into 3 qt. buttered casserole.

Cover with lattice strips of pie crust, and sprinkle with a little sugar and cinnamon.

Bake at 350 degrees for 30 to 40 minutes.

My mother got this recipe years ago from her friend, Frances Newman. It's been our family favorite peach cobbler recipe ever since.

As you can see from the picture below, I got lazy and didn't lattice the crust. Of course, it's easier to lattice it before you put it on the cobbler -- doesn't get so gooey that way, but really, does anybody really care as long it tastes good? Well, okay Martha maybe ;-).

Your famous peach cobbler is the BEST!! The kid's and I are about to make this today to suprise Daddy. Peach Cobbler is Keith's favorite!!
