Aunt Ruth's Pimento Cheese

Thought I'd share my Aunt Ruth's pimento cheese recipe. I made this the other day for sandwiches to take to the park. It's fast and easy and a lot better than the pre-made stuff. So, here's her recipe -- kind of -- she never measured.

Aunt Ruth's Pimento Cheese

You'll need:

*Grated cheese -- about 8 oz. of your favorite cheese or cheeses (or more depending on how much you need)

1/2 of a small jar pimentoes (about 1 T.) or to taste (you can put what's left in the freezer -- in the jar -- for next time)

1/4 c. mayonaise

1/2 teas. Jane's Crazy Mixed Up Salt (we cannot live without this and use it on everything)

1 teas. Lea & Perrins Worcestershire Sauce

Mix and spread on your bread.

*Note -- I used about 1/2 cup of this really good English Cheddar pictured below, 1/4 cup smoked Gouda, and 1/2 cup of regular pre-grated cheddar. Of course, you can mix and match whatever you like, and you can also add all kinds of interesting things if you want -- like pecans or whatever. A good friend always puts chopped jalapenos in hers, and it's so good.

Anyhow have jumped in on this post to say how funny as I buy Denhay bacon & cheese.Its sold in our little local independant shop & is jolly tasty! How on earth do you manage to get hold of it over the pond :o)
