Retro Christmas Cookies

Do you remember Haystacks? I remember these from my long ago childhood as always being one of the treats on Christmas cookie trays, and I loved them. So, I was at the grocery store the other day browsing the baking aisle and noticed the butterscotch chips. I picked them up and there was the recipe for Haystacks on the bag. I tossed them in my basket along with the other ingredients called for (except marshmallows - don't remember those being in the Haystacks of my childhood?). If you've never had them, you'll probably think this recipe sounds horrible, but they're so good in a retro 60's kind of way.

Here's the easy recipe:


1  11 oz. bag butterscotch chips
3/4 c. creamy peanut butter
2  5 oz. cans chow mein noodles

Melt butterscotch chips in microwave til melted (about 1 - 2 minutes).
Stir in peanut butter.
Stir in chow mein noodles.
Drop by tablespoons onto wax paper.
Store in fridge.

Oh yes! My mother made them and she did include the marshmallows. Other than the scratchy feeling of undercoated chow mien noodles, I loved them. There was another childhood cookie I couldn't get enough of. They had coconut and cocoa. They were balls. Do you know what those might be called?
